That's right. If I remember correctly it came from pagan traditions and was popularized by Christianity.

I know there is special pruning needed for it to maintain its small size, but it seems as though the shape has already been trained.

Yes. I wish I had paid more attention to what it was called here. I don't know if you'll find anything by 'bonzai' or not.

I do know it is important that the tree not outgrow the roots.
